How to make Toad in the Hole

Toad in the Hole is a traditional British dish that combines sausages and Yorkshire pudding batter. It’s hearty, comforting, and fairly simple to prepare. Here’s a step-by-step guide to making Toad in the Hole at home.

Ingredients:

  • 6-8 pork sausages (preferably high-quality or Cumberland sausages)
  • 1 cup (120g) all-purpose flour
  • 2 large eggs
  • 1 cup (240ml) milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil (for cooking the sausages)
  • Fresh thyme or rosemary (optional, for extra flavor)

For the Gravy (optional but recommended):

  • 1 onion, thinly sliced
  • 1 tablespoon butter
  • 2 tablespoons all-purpose flour
  • 2 cups (500ml) beef or vegetable stock
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste

Equipment:

  • Oven-safe dish or roasting pan
  • Whisk
  • Mixing bowl

Instructions:

1. Preheat the Oven

Preheat your oven to 220°C (425°F). You need it hot for the batter to rise properly.

2. Prepare the Batter

In a large mixing bowl, whisk together the flour, eggs, milk, salt, and pepper until smooth. Let the batter rest for about 20-30 minutes. This resting time helps the Yorkshire pudding batter become lighter and rise better in the oven.

3. Cook the Sausages

While the batter is resting, heat the vegetable oil in a frying pan over medium heat. Add the sausages and cook until browned on all sides, about 5-7 minutes. They don’t need to be fully cooked through, as they’ll finish cooking in the oven. Alternatively, you can pre-bake them for 10 minutes in the oven, turning once.

4. Heat the Baking Dish

Once the batter has rested, place your oven-safe dish in the preheated oven. Add 1-2 tablespoons of oil into the dish, ensuring it is evenly coated, and let it heat for 5 minutes. This hot oil helps the batter rise and creates a crisp crust.

5. Assemble and Bake

Carefully remove the hot dish from the oven and immediately pour in the batter. Quickly arrange the browned sausages on top of the batter. The heat from the oil will cause the batter to start cooking right away, so move swiftly. Return the dish to the oven and bake for 25-30 minutes or until the batter has puffed up and turned golden brown. Avoid opening the oven door too often, as this can cause the batter to collapse.

6. Make the Onion Gravy (Optional)

While the Toad in the Hole is baking, you can prepare the onion gravy. In a saucepan, melt the butter over medium heat. Add the sliced onions and cook until softened and caramelized, about 10 minutes. Stir in the flour and cook for another 1-2 minutes. Gradually add the stock, whisking constantly to avoid lumps. Add Worcestershire sauce and season with salt and pepper to taste. Let the gravy simmer for about 5-10 minutes until it thickens.

7. Serve

Once the Toad in the Hole is golden and risen, remove it from the oven. Let it sit for a couple of minutes before serving. Slice into portions and serve with the onion gravy, mashed potatoes, and vegetables of your choice.
